Truffles Under Denmark - tasting evening: Friday 13 November 2026, 18:00–20:00, Jan Nygaard AS, Kongens Lyngby. Tickets cost 1250 kr.
On November 13, Jan Nygaard AS in Lyngby invites you to an evening about Danish truffles - a delicacy hidden beneath the country's beech trees, requiring a trained nose to find. The evening brings together truffle hunter Rune Richtendorff, chef Mikkel Højborg Olsen, and sommelier Rasmus Vejbæk-Zerr, who together guide guests from the moment a dog catches a scent on the forest floor to the truffle landing on the plate with the perfect wine.
Rune Richtendorff opens the evening with stories about hunting Danish truffles and how he learned to find them - an art you could walk past your entire life in a Danish forest without noticing. Throughout dinner, he returns with tales from his work in the woods. Mikkel Højborg Olsen prepares three light dishes with Danish truffles and presents them as you eat, so you experience how the truffle's aroma and flavour shift depending on the other ingredients. Rasmus Vejbæk-Zerr selects and presents wines for each course, discussing how the wine's acidity, body, and aroma interact with the food.
The evening unfolds seated, with servings alternating between stories from the forest, kitchen, and wine cellar, with plenty of time for both plate and glass.
Guests can also buy a Danish truffle to take home directly from Rune, who offers advice on storage - perhaps best paired with just a little butter, an egg, and a quiet morning the next day. Truffles for takeaway are settled separately and depend on how many Rune and his dog have found.
