Foraging & 3-Course Menu over Bonfire in Gribskov

Join us for a sensory autumn evening at Haldbjerg Naturcampus, where we forage for wild herbs, berries, mushrooms and edible plants - and then transform the season's finds into a dinner cooked over a bonfire. Together we explore nature's pantry and discover autumn's wild flavours, before gathering in the cosy bonfire hut around set tables. Here we prepare the food together over the embers and enjoy a meal full of smoke, warmth, deep flavours, fresh herbs and ingredients you may not have known existed just outside your door.

Menu:
Starter: Grilled brie with wild herbs, sweet fruit, crispy nuts and honey.
Main course: Seasonal game with cloudberry, berries and mushrooms, creamy mashed potatoes and rich red wine sauce.
Dessert: Bonfire-baked apples filled with marzipan and meadowsweet, served with soft vanilla sauce.

Schedule 15:00-20:00
Welcome: We meet at Haldbjerg Naturcampus, where you are welcomed and we go through the day's programme and practical details.
Guided foraging tour: We explore nature's pantry and forage for wild ingredients the season offers.
Cooking over the bonfire: Back at the bonfire hut we prepare dinner together over the embers using foraged ingredients and selected seasonal produce.
Communal dinner in the bonfire hut: We gather around the long tables and enjoy a season-inspired meal full of autumn atmosphere, smoke, embers, herbs and deep wild flavours.

The event takes place outdoors, so dress practically according to the weather. Wine menu and local drinks can be purchased on the day. After dinner you can continue enjoying our trust-bar. If you wish to extend the evening, you can book accommodation at Haldbjerg Naturcampus and wake up in the middle of nature the next day. Limited places available.
