Helene Weinkouff Barsøe (born 1999) studied communication at CBS and runs the food project Heba Heba Kitchen. A former IBS patient herself, she co-wrote the book Mavero with gastroenterologist Alice Højer Christensen, exploring the links between the gut, the microbiome and the nervous system.
