Morten Christensen

About

Morten Christensen is a gastrophysicist and associate professor (PhD) in science education at UCL University College in Denmark, holding a doctorate in molecular biophysics from the University of Southern Denmark. His work sits at the intersection of kitchen practice and natural science, using food and flavour as a gateway to teaching physics and chemistry across all school levels. As coordinator of GastroLabCollege and a researcher at the Smag for Livet centre, he has developed teaching materials and co-founded the GastroLab at Kold College in Odense. In 2024 he co-authored the 456-page textbook "Gastrofysik og smagshåndværk" (Praxis), aimed at culinary students and vocational teachers.
