Søndagsskolen # 9 - Learn to Make Wild Wine with Henno · Copenhagen
Description was written before the event

Søndagsskolen # 9 is a hands-on introduction to wild wine-making with Henno Matzen - organic farmer, chef, forager, and natural winemaker. The workshop is conducted in Danish and requires no prior experience.

Henno shares his philosophy of harvesting fruits and herbs in season - from dandelions and rhubarb to bird cherry blossoms - and walks through the practical methods of wild wine-making: step-by-step fermentation, identification and picking of wild plants, finding wild yeast, and using simple equipment. All participants will work directly with the raw materials. Henno has learned from legendary forager Roland Rittman and worked in kitchens including Dragsholm Slot, Stedsans in the Woods, and Knystaforsen. Today he lives with his partner Henriette on Fejø, where they make wild wine at their vineyard Storemosegaard.

The afternoon concludes with a tasting of 3-4 of Henno's own wines and a group reflection on the day's learning. All participants receive notes on the wild wine method to take home.

Søndagsskolen takes place outdoors, so dress for autumn weather. It is a recurring informal school at Alle Tiders, created and curated in collaboration with visual artist Mia Carl, where an artist, farmer, chef, educator, or craftsperson teaches something new each month.
