Søndagsskolen #7: Kimjang with Se Eun Lee

Kimjang is a Korean tradition where people gather to make large batches of kimchi after the autumn harvest - as preparation for winter. Kimchi is a traditional side dish found in many varieties. In this workshop you will learn both the technique and the culturally rooted history behind kimchi fermentation, and you will get your hands into the red kimchi sauce yourself. At the end you take your own baechu kimchi home with you.

Bring a clean container large enough for a whole Chinese cabbage with sauce. Søndagsskolen takes place outdoors, so bring a sweater in case of cooler weather - and clothes you are not afraid to get dirty.

Se Eun Lee is Korean-adopted, organizer and Green Food Craftsperson with a special passion for kimchi and its place in Korean food's cultural and political history. She collaborates with Orupdal Jordbrug, a regenerative farm in Lejre, to grow Chinese cabbage adapted to the Danish climate. She has previously organized pop-ups, food stalls at Det Grønne Loppemarked, participated as a panelist at Grønt Marked and organized BIPOC farm trips.

Søndagsskolen is a recurring informal school at Alle Tiders, created and curated in collaboration with visual artist Mia Carl. Each month an artist, farmer, chef, educator or craftsperson is invited to teach us something new. Everyone is welcome.
