Ole G. Mouritsen is a professor emeritus of gastrophysics and former professor of biophysics at the University of Southern Denmark. For decades he has researched taste and food, especially umami and seaweed, and has written numerous popular science books on the subject. He frequently lectures, explaining the science behind food and cooking to general audiences.
